Summer Salad

I love summer! This delicious mix-and-match salad is perfect for any summer meal. This recipe is simple, quick, healthy, and extremely adaptable to whatever veggies and fruits you have on hand!


Not only will this salad recipe leave you feeling satisfied, but the crisp combination of veggies and fruit will keep you cool when a heatwave strikes. And they’re easy enough to whip up for a last-minute.


There are so many vegetables and fruits are in season now. Why not create your own summer dishes!



Serve 4


Ingredients

1 cup kidney beans (tin, drianed)

1 small tin or freshly cooked sweetcorn

3-4 pickled chilli peppers

1/2 small onion or shallot, thinly sliced

1/2 pomegranate

1 cup tomato, cut to bite sizes (any type)

half cucumber, cut to bite sizes


Dressing

juice of 1/2 -1 lime

salt and pepper to taste

fresh mint/basil for garnish


Method


- Mix all the ingredients in a large bowl. Keep in fridge before serve.

- Enjoy!
