What to do with all the leftover roasted meat?
Here is a simple recipe you'll certainly want to try . It's quick and easy.
Leftover meat, shredded (Chicken, Beef, Pork, Turkey or Lamb)
1 small onion, thinly sliced
1 piece ginger, thinly sliced
2 cloves of garlic, finely chopped
1/2 cup sweet chilli sauce
1 cup fresh or tin pineapple
1/2 cup pomegranate seeds
1 tbsp cooking oil
1 tbsp fish sauce or soy sauce
1 tsp sugar or honey
- Put a large frying pan over a medium high heat. Once it’s hot add the cooking oil, followed by the onion, ginger, garlic. Keep stirring for a minute until everything starts to soften.
- Add the leftover meat (chicken, beef, pork, turkey or lamb), stir-fry for a few minutes. Then add the sweet chilli sauce, fish sauce and sugar, mix well.
- Finaly add the pineapple and pomegranate seeds. Stir-fry for another minute. Add more seasoning if needed. Serve with rice.
